How come the fact that menu prices can be increased by 15%-20% is never mentioned. If a person is currently expecting a 100% dinner bill they are also expecting to tip 15-20$ or more. The current system hedges the restaurant's losses if it is slow and encourages servers to want to be understaffed.The difficult part is that there is a great deal of side work, and you'll typically have at least 20 tables a shift (not just 2 tops either).
