The edge is going to last longer, you are going to have more edge stability due to higher hardness, and it is going to be more stainless. It might be a little slower to sharpen but I don't think S35VN is bad to sharpen at all. I don't know how Ontario's heat treat of S35VN is, that steel is relatively new to them as far as I know.
