i think its cos the Uchigatana got build in bleed thats why you cant use it on it. the only weapon with bleed build in and is "enchantable" is that bloodhound curved sword. It's because of the blood affinity on your weapon. You can't put affinities other than physical ones if you want to enchant it. It's blood affinity.

Personally I would put bloody on both of them, but you can test it out yourself and see what you prefer.
